Sweet Potato Greens with Fish and Shrimp

An African greens "sauce", flavored with fish and dried shrimp.

 1 cup cooking oil
 3 lbs (or more) of sweet potato greens, or similar greens
 1 onion, chopped
 1 chile pepper, cleaned and chopped (or left whole) — for a spicy hot dish, cut the chile pepper into small pieces; for a milder taste, leave it whole and remove it before serving
 1 piece (the size of your hand) of dried, salted, or smoked fish (such as cod or herring), soaked in water, cleaned and rinsed
 1 tbsp tomato paste
 ½ tsp baking soda
 ½ cup dried shrimp or dried prawns (or a handful of fresh shrimp or prawns)
 ½ lb fish (per serving), pan-fried and cut into pieces (optional)
 ½ lb chicken (per serving), pan-fried and cut into pieces (optional)
 salt and black pepper (to taste)

Heat the oil in a large pot. Add the greens, onion, pepper, dried fish, tomato paste, baking soda, and dried shrimp or prawns (if desired). Cook for fifteen minutes, stirring often.

When greens are tender (cooking time will vary depending on the kind of greens), add fresh shrimp or prawns, and fried fish or chicken. Adjust seasoning to taste. Serve with Rice.
