Yams are a staple food throughout much of Africa, but are particularly important in Western Africa.

 ½ lb yam (not sweet potato), per person

Cut yams into large serving-sized pieces. Wrap each piece in aluminium foil (or banana leaves), as one would wrap baking potatoes. Bake in a hot oven, or roast on an outdoor grill until tender. Serve with salt, pepper, and butter.
